Sunshine Dill Pickles
Who doesn’t like pickles? Well, now you can make your own at
Prep time: 15 minutes
Cook: 96hrs
Makes: 1 gallon
Ingredients:
Fresh Dill – Heads and stems
Garlic Cloves *Optional*
Cucumber – Washed and scrubbed
1 cup of White Vinegar
½ cup of salt
Recipe
1.Take a gallon-sized jar with a tight-fitting lid, and place a layer of Dill at the bottom of it. Put a layer of cucumbers on top, and add garlic cloves.
2.Continue to layer dill and cucumbers until you reach the neck of the jar and finish with a layer of dill at the top.
3.Add salt and vinegar to the top of the jar and fill with cold water.
4.Put on the lid and screw it on tightly. You can add a square piece of wax paper or plastic wrap over the lid if you’d like.
5.Shake well
6.Put it in a sunny area for 4 days
7.Turn jar slightly every day for even exposure to sunlight. Leave it outside an additional day if it’s cloudy or
rainy.
8.Chill and eat

Spaghetti Sauce for Canning
Prep: 20 mins
Cook: 1hr 35mins
Servings: 7-8 quarts
Ingredients:
3 medium chopped onions
2 cups of chopped green bell peppers
¾ cup chopped Hungarian wax chile (banana peppers)
1 (8 ounces) can of mushrooms sliced, chopped, and drained
3 teaspoons of minced garlic
16 cups of tomatoes, peeled, cored, and chopped
3 (12 ounces) cans of tomato paste
3 tablespoons of brown
1 tablespoon of dried oregano
4 teaspoons of salt
2 teaspoons of dried basil
1 teaspoon of black pepper
1 teaspoon of crushed red pepper flakes
2 tablespoons of Italian seasoning
½ teaspoon cumin
Recipe
1.Put all ingredients in a large pot
2.Bring pot to a boil
3.Reduce to a simmer, and keep partially covered for 2 hours while simmering
4.Make sure to stir occasionally
5.After contents of the pot have simmered, fill clean canning jars within a ½ inch of the top of the jar. Put on cap and screw the band on tight.
You can also freeze the sauce in freezer bags
Canned Salsa
Prep time: 30 minutes
Cook: 2hrs
Makes: 4 servings – 1 ½ cups
Ingredients:
2 large diced tomatoes
½ small finely chopped sweet or red onion
1-3 jalapeño peppers finely chopped
2 tablespoons of chopped cilantro
1 clove of finely chopped garlic
2 tablespoons of freshly squeezed lime juice
1 teaspoon of olive oil
¾ teaspoon of salt
½ teaspoon of cumin
¼ teaspoon of black pepper
