Healthy Eats for Busy Peeps
Here are our healthy snack ideas, great for guilt-free snacking for any occasion

Hummus
Makes about 2 cups
Ingredients
1 cup of
chickpeas drained, cooked chickpeas
1 cup of
edamame, cooked
3
tablespoons extra-virgin olive oil
3
tablespoons tahini
1 ½
tablespoons lemon juice
1 small
clove of garlic, roughly chopped
1 teaspoon salt
½ teaspoon
finely ground black pepper
For serving: pita wedges, raw vegetables, pita chips
Kitchen Appliances: Food processor or blender
Recipe:
1. Drain, rinse and wash the chickpeas and edamame in a strainer until all the residue is gone
2. Put everything in the food processor or blender.
3. Blend everything until smooth. Process the mixture until it becomes smooth. Make sure to mix in the chunks on the sides for consistency.
4. Taste and adjust, add any ingredients if necessary. If the Hummus is stiffer than you’d like, add more lemon juice or olive oil to thin it and make it creamier.
5. Transfer to a serving dish
Some variations:
- Try blending roasted vegetables into it. Vegetables like bell peppers, garlic, and zucchini all taste great.
- Add 1-3 teaspoons of spices like cumin or smoked paprika
- You can also add crushed nuts like walnuts or almonds
Guacamole
Ingredients:
3 ripe
avocados, cut into medium squares
1 tomato, finely
diced
½ cup finely
diced red onion
2
tablespoons finely chopped fresh cilantro
2
tablespoons fresh lime juice
½ jalapeño,
finely chopped
1 minced
garlic clove
¼ teaspoon
ground cumin
Salt
Corn
tortilla chips
Recipe:
1. In a large bowl, gently mix the avocados, tomato, onion, cilantro, lime juice, jalapeño, garlic, and cumin.
2. Add Salt for taste
3. Serve with corn chips.
Bean Salad
Ingredients:
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can cannellini beans, drained and rinsed
1 green bell
pepper, chopped
1 red bell
pepper, chopped
1 (10 ounce) package frozen corn kernels
1 red onion,
chopped
1/2 cup
olive oil
1/2 cup red
wine vinegar
2
tablespoons fresh lime juice
1 tablespoon
lemon juice
2
tablespoons white sugar
1 tablespoon
salt
1 clove
crushed garlic
1/4 cup
chopped fresh cilantro
1/2
tablespoon ground cumin
1/2
tablespoon ground black pepper
1 dash hot
pepper sauce
1/2 teaspoon
chili powder
Recipe:
1. In a large bowl, combine beans, bell peppers, frozen corn, and red onion.
2. In a small bowl, whisk together olive oil, red wine vinegar, lime juice, lemon juice, sugar, salt, garlic, cilantro, cumin, and black pepper. Season to taste with hot sauce and chili powder.
3. Pour olive oil dressing over vegetables; mix well. Chill thoroughly, and serve cold.
